Bison tastes similar to beef, but has a slightly sweeter undertone. It is a very tender meat.

Bison can be used in any recipe that you would use beef in. However, Bison is much leaner than beef so it is best to cook it for a shorter amount of time and on a lower heat.

The terms bison and buffalo are typically used interchangeably. However, bison and buffalo are not the same. Bison include the American/Plains Bison and the Woods Bison. Buffalo include the Water Buffalo and Cape Buffalo. Bison have the large humps on their backs while buffalo do not. They also vary in the size of their heads, horn shape, and their coats. We have Bison on our farm.

Our bison are on a rotational grazing system. They are on pastures year-round so their main diet is grass. In the winter when the pastures aren’t producing enough grass, we feed hay and corn silage that we grow to supplement their diets.
-
The cuts are the same as beef. Bison do have an additional muscle that produces the hump roast.
